Musur Daaler Khichuri (Masoor Daal Khichdi)

Khichdi is generally made from moong dal. But moog dal when roasted and cooked, becomes little difficult to digest. Masur dal is easily digestible and so is its khichdi. This is yet another recipe for sick foodies. Its easy, light, tasty and nutritious too.

1 Cup Rice
1 Cup Masur Dal
1 tsp turmeric (Haldi) powder
1 tsp cumin (Jeera) powder
1 tsp coriander (Dhania) powder
1 tsp whole cumin
2 Bay leaves
1 dry red chilli
1 big onion chopped
1 tsp ginger paste
1 big tomato chopped
2 cloves of garlic crushed
1 tsp sugar
Salt to taste
2 green chillies
Vegetables if available- Potato, cauliflower, beans, carrot
Oil 2 tsp
Ghee 1/2 tsptsp
1 ltr water.

In a cooker, heat the oil. Add whole jeera and bay leaves and fry till golden. Then add red chilli, onions, ginger paste, crushed garlic , tomato and stir fry. Wash the rice and masur dal, stain the water and add it to the cooker. Now put turmeric, cumin and coriander powder and stir fry for 1 minute. Cut the vegetables in big size and add them along with salt & sugar in the cooker. Now put 750 ml water and pressure cook till 2 whistles.
Open the cooker after 15 mins. Check if water has dried up. If so, add the remaining water and bring to boil. Once desired consistancy is achieved, put away from flame. Garnish the khichdi with ghee and green chilies.
